Ingredients

Various types exist, with recipes of various kinds. Here is one:

200 gr. flour type “2”
80 gr. flour type “0”
2 spoons of starch
100 gr. sugar
70 gr. soya drink (or similar)
1 sachet of yeast (cream of tartar and bicarbonate mix)
The grated rind of 1 untreated lemon
80 gr. soya butter or organic deodorized sunflower oil

Method

Put together the soya butter with 50 ml of soya milk, a pinch of salt, some drops of lemon juice: start to mix and pour in slowly circa 100 ml of organic deordorized sunflower oil. The result is a thick butter which will keep in the fridge for 3 days in an airtight jar.
For our pastry: lets start by mixing together first the dry ingredients, then the liquid. Leave to rest for 30 minutes before spreading out, giving the preferred shape.
Current suggestions would be to form a circle (with the help of pastry rings) and in the centre arrange chocolate or jam. Place on baking sheets and bake. Bake at 180°C for a few minutes.
