Bechamel sauce
Ingredients
300 ml. Soya drink (or other vegetable drink)
Circa 35 ml. Extra virgin olive oil
A little salt and pepper (or nutmeg)
30 gr. flour (type “0”, “1”,”2” or wholewheat)
Method
Add to a small pan the sifted flour and oil, mix whilst heating the roux : the more the roux is cooked, the tastier the sauce. Add the milk (best if lukewarm) and mix until reaching the desired density. Add salt and pepper.
- Basil flavoured version: add 8-10 leaves of basil cut or finely chopped. Ideal for many preparations
