Pesto
Ingredients
1 Handful of cashew nuts
1 Handful of shelled green pistachios
Circa 4-5 spoonfuls of extra virgin olive oil
A little salt
basil, rocket salad and parsley in equal parts
Method
Put all ingredients in the blender or mixer and whisk.
If you have a mortar, use in place of domestic appliances.
Will keep in the fridge in a tightly sealed jar for several days
Can be frozen. Alternatively almonds, pine nuts and macadamia nuts etc. can be used.
