Ingredients

300 gr rice

vegetable broth (1.2ltr)

150 gr. mushrooms

A handful of spinach leaves

80 gr pumpkin

80 gr yam

1/2 pepper

4 figs

Few grapes

fresh thyme

parsley, basil, chives

oil, salt, pepper

1 glass wine

Method

How do you prepare a good risotto? Easy, following a few little rules like roasting, adding wine, evaporation and gradual adding of broth..... Read the recipe and you’ll discover that the steps are easy and the result will be a real surprise!

 

>>>prepare a vegetable broth with onion, carrot, potato, zucchini and whatever vegetables you have to hand

 

>>>clean and slice the vegetables for the risotto

>>>cook the mushrooms in their own pan with oil and salt

>>>mince the other vegetables and cook with oil and salt

>>>chop the parsley, basil and chives

 

>>>now start to heat the rice in a pan, roast for a short time and then add the extra virgin olive oil

>>>leave to absorb the oil and add a glass of wine

>>> when the wine has evaporated add the salt and then the broth a little at a time, until the rice absorbs it each time.

>>>towards the end of cooking add all the vegetables which have previously been cooked and finish the cooking of the rice (tasting to test the taste and cooking of the grain)

 

>>> then pour onto plates finishing off with the chopped herbs, thyme leaves, sliced grapes and slices of fig.
