Vegan Ravioli
Ingredients
I'd like to suggest a ravioli but with a different type of filling, which I advise to try!
We’ll use, aswell as other ingredients, tahini, a sesame cream, which apart from having a marked flavour is full of precious nutrients and lots of calcium!
ingredients
pasta ravioli:
250 gr semolina flour
50 gr type 0 flour
5 gr salt
150 ml water
1 spoonful extra virgin olive oil
For the filling
2 medium potatoes
1 zucchini
1 spring onion
Parsley
2 teaspoons tahini
Method
Knead the pasta ingredients together, creating a well in the flour and adding the water a little at a time whilst kneading by hand. Work the mixture, form a ball, soft and workable; leave to rest for about 30 minutes at room temperature.
Boil the potatoes and cook the zucchini and the spring onion in a pan with oil and salt
Blend the vegetables and add the chopped parsley and tahini
Roll out the pasta, cut into squares and pour in the filling.
Cover with other pasta and seal the ravioli
Boil in water for a few minutes (about 2-4)
Serve with your favourite sauce, perfect even with a simple basil and tomato sauce or with mixed vegetables!
