Cous Cous with vegetables, chickpeas and dried tomatoes
Ingredients
50 gr. Cous cous
Vegetables of your choice (zucchini, carrots, eggplant, peppers) stir fried
150 gr. boiled chickpeas
Strips of dried or semi dried tomatoes
1 handful of rocket salad
The grated rind of ½ untreated lemon
1 carrot, 1 celery stick and some fresh baby tomatoes
Water, oil, salt, pepper and tumeric
Method
Cut the vegetables into cubes and heat in a pan. Place the cous cous in a large bowl and add the salt, tumeric, pepper and oil.
Then add boiling water, cover the cous cous and add more water to allow the grains to absorb the water. Cover for 5 minutes then rake the cous cous with the prongs of a fork. Finally add the cooked vegatables, raw diced vegetables, the chopped rocket, the dried tomatoes, the lemon rind and then season with salt and oil.
