CAULIFLOWER PIZZA (A recipe from my friend Elisa)
Ingredients
1 small cauliflower
150 grammes of chickpea flour
2 spoonfuls of extra virgin olive oil
Just enough tomato, puréed
oregano or basil (or even olives, onion, zucchini/courgettes, capers, rocket salad, herbs, peppers, etc.)
salt and pepper
optional: veg mayonnaise at the end of cooking or another sauce
Method
- Cut the cauliflower into pieces and boil for very few minutes (or better still, steam or cook in a steamer). It must remain crunchy.
- Chop and roughly mash the cauliflower adding the chickpea flour, a couple of pinches of salt and very little pepper. Place the mixture in an oven dish (covered with baking sheets), and lay out evenly.
- Season with a drizzle of oil and cook the base for about 10 minutes at 200 degrees.
- Take out this “pizza” and top with tomatoes, capers, olives etc. Leave to cook for another 5/7 minutes, remove from the oven and serve immediately.
