Scrambled Tofu
Ingredients
1 loaf of tofu
2 small zucchini
1 fresh scallion
1/2 level teaspoon of tumeric
Extra virgin olive oil, salt, pepper, parsley and herbs of your preference
Method
"scrambled eggs" are known worldwide but how can you realize a recipe of that type without using eggs? I love this vegan version of the well known recipe which uses tofu as the main ingredient. The sauteed scallion makes it more inviting, adding seasonal vegetables completes the dish, the colour of the tumeric makes it even more appetising and the wise use of herbs such as pepper, parsley and whatever you prefer allows this dish to be really appealing!
Chop the scallion and fry in a pan with extra virgin olive oil
Crumble the tofu by simply applying presure on the loaf and pour it into the pan
Slice the zucchini into small rounds and add to the pan, season with salt and pepper
In about 10 minutes the dish will be ready, now you just need to add tumeric, pepper, parsley and other herbs of your choice
Can be served on croutons of toasted bread!
