Piadina
Ingredients
400 gr. flour type “2” (or of choice)
200 ml. water (sparkling)
50 ml. Extra virgin olive oil
1 pinch of salt
Method
Place all ingredients in a bowl and knead well. Leave to rest for at least half an hour at room temperature then roll out the piadina using a rolling pin. Cook in a pan on both sides. Fill as preferred…. Here are some ideas:
a) chickpea hummus, grilled radicchio and sundried tomatoes
b) veg mayonnaise, fresh tomatoes and boiled green beans
c) sauce for sandwiches with all types of vegetables, raw or cooked
d) veg meatballs and salad
e) farifrittata
d) fresh sliced vegetables with avocado and sauces
e) guacamole and veg burger
