Filled Shortcrust Pastry Biscuits
Ingredients
200 gr. flour type "2"
80 gr. flour type "0"
2 spoonfuls starch
100 gr. sugar
70 gr. soya drink (or similar)
1 sachet of yeast (mix cream of tartar and bicarbonate)
the grated rind of 1 untreated lemon
80 gr. soya butter or biological deodorized sunflower seed oil
Method
Prepare the soya butter with 50 ml. soya milk, a pinch of salt, some drops of lemon juice: start to whisk and slowly add about 100 ml. bio deordorized sunflower seed oil. This obtians a dense butter which can be kept in an air tight jar in the fridge for 3 days.
For the pastry: start by mixing first the dry ingredients, then adding the liquid ones. Leave the dough to rest for 30 minutes before rolling it then giving the shape we want.
Todays suggestion is to go for round (with the help of a pastry cutter) and in the centre place some chocolate or jam. Seal well and place on greaseproof paper in the oven. Cook at 180°C for a few minutes.
