Ingredients

Firstly, prepare the veg sponge cake which we will then transform into a wonderful cake with fresh flavours.

you will need

ingredients for the sponge cake (see above link)
1/2 pineapple
2 limes
40gr. cornstarch
1 tin of coconut milk
40 gr. light brown sugar
Desiccated coconut
Soya whipping cream

Method

Remove the external and harder internal part of the pineapple then cut into very small, precise cubes. Put the rind of half a lime into the container with the pineapple cubes to let them soak up the flavour.

To prepare the cream : pour the coconut milk into a bowl together with the grated rind of 1 lime (or more), the sugar and the cornstarch. Heat in a pan then remove from the heat before it gets too thick.

Cut the sponge cake in half and fill with the coconut lime cream and the pieces of pineapple. Then cover all with the whipped cream and desiccated coconut and add some more pineapple.
In the photo attached, you will see the cake decorated with violets which are edible flowers.
