Vegan Tiramisu
Ingredients
Ingredients for 6-8 portions
200 gr. dry biscuits with vegetable ingredients
Ingredients for the lemon cream (or vanilla) (see basic recipe)
2 cups of coffee (or barley)
1 tin of cold coconut milk (or 200 gr. soya cream for desserts)
Optional: chocolate flakes
Cocoa in powder
Method
Prepare the cream (see basic recipes) and leave to cool.
Meantime dip the biscuits in the coffee and arrange in a pyrex dish or cup (if making single portions). If your biscuits are thin you can consider making a double layer.
Add to the cooled cream the solid part of the coconut milk (kept in the fridge at a low temperature) and mix. An alternative to the coconut milk could be whipped soya cream for desserts, adding it to the cream being careful that it keeps it consistence.
Layer on top and then repeat. Decorate with cocoa powder, flakes or whatever you prefer.
