Ingredients

ingredients for 2 ricottas

 200 gr. almonds (peeled)

 10 gr. whole marine salt

 The juice of 1 lemon

 water

 pink pepper

 aromatic herbs: chives, thyme, marjoram etc.

 optional flaked nutritional yeast and lemon zest

Method

Soak the almonds for at least 8 hours

Drain well and place in a mixer with water (the water must be at least 1,5cm more than the volume of the almonds)

 Now add the salt and lemon juice and cook in a pan

When it starts to boil, remove from the cooker and, if you like, add the nutritional yeast.  Mix.

Pour into a sieve with a thin white cloth (lint/gauze) and leave to strain the fridge.

When the ricotta is ready you can season as preferred (I suggest aromatic herbs, pink pepper, lemon zest and oil). Can also be used for stuffed pasta and for desserts!
