Babaganoush (cream of eggplant)
Ingredients
1 round eggplant (globular)
oil
salt
1/2 clove of garlic
the juice of half a lemon
1 spoonful of tahini (cream of sesame)
parsley
chili powder
optional: mint leaves
Method
Babaganoush is obtained cooking the whole eggplant in the oven, having first sliced the surface several times (to allow the bitter liquid to exit).
1. using a blade, slice the outside of the eggplant in various places
2. cook in the oven at 180-200 °C for 30-35 minutes.

4. you can whisk with the oil, salt, chili powder, a little garlic, lemon juice, parsley and 1 spoonful of tahini.
