Soya Ricotta
Ingredients
1 ltr. vegetable soya drink
30 ml. Lemon juice or vinegar
1 spoonful satin salt
Season of choice (herbs, spices, pepper, seeds)
Method
In a pan, bring the soya milk to boiling and then turn off the flame. Add 30ml. of lemon juice or vinegar and 1 spoonful of satin salt.
The milk will immediately curdle. Filter with a colander layered with a clean cloth.
Add the seasoning of choice to the solid part: herbs, pepper, spices, seeds. Mix and pour into a cheese dish and place in the fridge for some hours.
