Chickpea Hummus
Ingredients
200 gr. boiled chickpeas
2 spoonfuls of lemon juice
Few spoonfuls of water (to be added a little at a time)
¼ garlic clove
3 spoonfuls of extravirgin olive oil
Salt
1 spoonful of Tahini (sesame cream)
Method
It is advisable to remove the husks of the chichpeas which can be done rubbing them with a teatowel. This achieves an even creamier result.
Now put all ingredients in a mixer and blend well. It is advisable to add the water a little at a time, adding also a little oil and salt.
Alternatively you can use cubes of ice to lighten the colour of the hummus.
If you prefer, you can personalize the taste of your hummus adding sundried tomatoes, parsley or paprika or toasted pine nuts or mature avocado or other vegetables…. Using your imagination to create your own culinary masterpieces!
