SANDWICHES
Ingredients
• sandwich bread (most have 100% vegetable ingredients)
• 200 gr. Boiled chickpeas
• 1 handful of parsley
• 1 spoonful of desalted capers
• vegetable mayonnaise (LINK)
• sweet mustard (can be amply used)
Optional: grilled courgettes, mushrooms, sliced Jerusalem artichoke, raw baby spinach, rocket salad, radicchio and other vegetables
Method
- After preparing the vegetable mayonnaise (link) add to the blender the boiled and drained chickpeas, capers (having elimanted the salt), and the parsley.
- Blend until obtaining a good consistency and spread on sandwich bread. We can fill with other vegetables to enrichen the sandwiches, combining raw vegetables, cooked and pickled.
When done, fix the sandwich with a toothpick, baby tomato and a leaf of basil.
