Gluten free lemon cream
Ingredients
300 gr. vegetable drink (soya, almond, rice...)
45 gr. Rice flour
30 gr. Brown sugar
Rind of 1 untreated lemon
Tiny amount of tumeric (to colour)
Method
In a pan pour in the vegetable drink, brown sugar and rice flour. Cook on low flame and mix with a whip, adding the rind of half an untreated lemon, then add the tumeric. Turn off the flame when the cream thickens and leave to cool. Other variants can be achieved (vanilla, chocolate, etc.)
