Soya emulsion (or soya butter)
Ingredients
50 ml. soya vegetable drink (cold is best)
100 ml. organic deodorized sunflower oil
Pinch of salt
1 teaspoon of lemon juice (or white vinegar)
Method
In a container pour the milk, salt and lemon juice. Start to mix using an immersion blender and pour in the oil slowly, a little at a time. A thick cream should form. Put immediately in a tightly closed jar and leave in the fridge. In an airtight jar it will keep for 3 days in the fridge.
