200 gr. flour “0”
100 gr. rice flour
70 gr. light brown sugar
1 sachet of natural dessert yeast
Grated rind of 1 lemon
100 ml. sunflower oil
250 ml. water or vegetable drink
1 pinch of salt


In a bowl add first the dry ingredients, then the liquid and mix well.
Place in a lined baking tin (or ring) COVERING the tin with baking sheets (placing something – such as a pan – to stop it from moving): in this way the sponge won’t dry out and will cook in an even manner.
Bake in the oven at 180°c for circa 25 minutes. Leave to cool and then use
